Serves 4-5
Ingredients (organic/biodynamic)
- 1 pound green beans, trimmed
- 1/2 cup slivered almonds
- 2-3 cloves garlic, minced
- 1/4 cup vegetable broth or water
- Pinch of Celtic Sea Salt®
- Black pepper to taste
- Lemon wedges for garnish (optional)
Instructions
- Bring a sizeable pot of water to a boil, and have another bowl filled with ice water ready.
- Cook the green beans in the boiling water for 2-3 minutes. They should look bright green and be a little tender.
- Drain the beans and place them in the bowl of ice water to cool.
- In a pan, toast the almonds over medium heat for 3-4 minutes until golden, carefully stirring so the nuts will not burn.
- Add the garlic and a small amount of vegetable broth or water, and sauté for about 1-2 minutes until fragrant.
- Drain the green beans and add them to the pan with the garlic and broth mixture. Stir to coat and cook for another 2-3 minutes allowing the beans to heat through.
- Add salt and black pepper to taste. Add remaining vegetable broth or water if the pan gets too dry.
- Remove from the heat when the green beans are cooked through and coated to your liking, and transfer to a serving platter.
- Sprinkle toasted almonds over the top, and garnish with lemon wedges.
