Herb-Coated Roasted Pumpkin Seeds

Enjoy a crunchy, savory snack with these perfectly roasted and seasoned pumpkin seeds, featuring a delicious blend of herbs and spices. Enjoy these gluten-free, soy-free, and oil-free seeds as a healthy, flavorful snack, or as a crunchy addition to soups and salads!

Ingredients (organic/biodynamic):

  • 2 c. raw pumpkin seeds
  • 1 tsp. smoked paprika
  • 1 Tbsp. coconut aminos
  • ½ tsp each of the following herbs and spices:
    • onion powder
    • garlic powder
    • dried rosemary
    • dried thyme
    • dried basil
    • dried oregano
  • ½ tsp. Celtic Sea Salt®
  • ¼ tsp. freshly ground black pepper
  • Pinch cayenne pepper (optional) for heat

Instructions:

  1. Preheat the oven to 300°F.
  2. Clean pumpkin seeds by rinsing thoroughly under cold water, and draining. Use a kitchen towel to pat dry.
  3. Combine the coconut aminos with all of the herbs, spices, and seasonings to create a uniform mixture.
  4. Add the dried pumpkin seeds, and toss in the seasoning mixture  until thoroughly and evenly coated.
  5. Line a baking sheet with parchment paper or a reusable silicone mat. Spread the seasoned seeds onto the sheet in a single layer.
  6. Roast the seeds for 25-30 minutes, stirring or shaking the pan every 10 minutes to achieve an even roast. Look for a golden brown color and crisp texture.
  7. Remove pumpkin seeds from the oven and allow them to cool.
  8. Once fully cooled, transfer the crunchy seeds to an airtight container. When stored properly, they should remain fresh for several weeks.
