Ingredients (organic/biodynamic):
- 2 c. raw pumpkin seeds
- 1 tsp. smoked paprika
- 1 Tbsp. coconut aminos

½ tsp each of the following herbs and spices:
- onion powder
- garlic powder
- dried rosemary
- dried thyme
- dried basil
- dried oregano
- ½ tsp. Celtic Sea Salt®
- ¼ tsp. freshly ground black pepper
- Pinch cayenne pepper (optional) for heat
Instructions:
- Preheat the oven to 300°F.
- Clean pumpkin seeds by rinsing thoroughly under cold water, and draining. Use a kitchen towel to pat dry.
- Combine the coconut aminos with all of the herbs, spices, and seasonings to create a uniform mixture.
- Add the dried pumpkin seeds, and toss in the seasoning mixture until thoroughly and evenly coated.
- Line a baking sheet with parchment paper or a reusable silicone mat. Spread the seasoned seeds onto the sheet in a single layer.
- Roast the seeds for 25-30 minutes, stirring or shaking the pan every 10 minutes to achieve an even roast. Look for a golden brown color and crisp texture.
- Remove pumpkin seeds from the oven and allow them to cool.
- Once fully cooled, transfer the crunchy seeds to an airtight container. When stored properly, they should remain fresh for several weeks.
