- Mix greens, onion, and radish, in a large but shallow bowl.
- Whisk lemon juice, avocado oil, and herbs.
- Dress the salad and toss around.
- Sprinkle the top with your choice of cheese, pepitas, salt, and pepper.
- Fan avocado slices on the side of the bowl for presentation.

Kale Salad Recipe

Kale! They put that stuff on everything.
Serves 4
Salad:
4 C. roughly chopped Kale
4 radishes sliced thin
½ Medium red onion sliced thin
¼ C. Pepitas
¼ C. Cotija (goat cheese or feta cheese will also work well)
1 avocado sliced
Pinch of Celtic sea salt (or other mineral rich salt)
Coarse ground pepper (to taste
Dressing:
Juice of 1 lemon
1 Lg (or 2 small) garlic cloves crushed
Bundle of finely chopped thyme, parsley, basil (or choose your favorite herbs)
2 Tbs of Avocado oil (edible oils are not necessary but can be nice)
