Kale Salad Recipe

By Melissa Crispell Kale! They put that stuff on everything. Serves 4 Salad: 4 C. roughly chopped Kale 4 radishes sliced thin ½ Medium red onion sliced thin ¼ C. Pepitas ¼ C. Cotija (goat cheese or feta cheese will also work well) 1 avocado sliced Pinch of Celtic sea salt (or other mineral rich salt) Coarse ground pepper (to taste Dressing: Juice of 1 lemon 1 Lg (or 2 small) garlic cloves crushed Bundle of finely chopped thyme, parsley, basil (or choose your favorite herbs) 2 Tbs of Avocado oil (edible oils are not necessary but can be nice) Process:
  1. Mix greens, onion, and radish, in a large but shallow bowl.
  2. Whisk lemon juice, avocado oil, and herbs.
  3. Dress the salad and toss around.
  4. Sprinkle the top with your choice of cheese, pepitas, salt, and pepper.
  5. Fan avocado slices on the side of the bowl for presentation.
