Serves 5-6
Ingredients (organic/biodynamic)
- 1 bag of fresh cranberries (12 oz.)
- 1 cup water
- 6 Medjool dates, pitted and chopped (can use more if needed)
- 1 teaspoon. orange zest
- 2 Tablespoons fresh orange juice
- Pinch of Celtic Sea Salt®
Instructions
- Add fresh cranberries and water to a saucepan and cook over medium heat.
- Add the Medjool dates (start with 6 and add more if needed, to taste).
- Bring the misture to a boil, then reduce heat to a simmer.
- Add the orange zest and fresh orange juice to add a burst of citrus to the sauce.
- Simmer for 10-15 minutes, stirring occasionally. The cranberries will pop and the dates will soften, creating a thick sauce.
- Adjust sweetness, if needed, with additional dates.
- Add a pinch of Celtic Sea Salt for balance.
- Remove cranberry sauce from the heat and allow to cool and thicken. If it becomes too thick after chilling, you can thin the mixture with a splash of water or orange juice.
- Transfer the cranberry sauce to a serving dish.
- Serve it warm or chilled.
